Coconut Tarts

Carlos and I love coconut tart. I will always buy a few if I go down to Chinatown but I notice now they increased the price of the tarts. It used to be $0.75 a piece and now is $1.00. Actually is so much cheaper to make it yourself and it taste much better. So I decided to make some on New Year's Eve since I am not cooking anything for the reunion dinner. We went out for dinner at the nearby Chinese restaurant and came home for the coconut tarts.

Ingredients for the pastry:

2 cups of flour
1 stick of cold butter (112 grms)
1 egg - beaten
3 tbsp of sugar
1/2 tsp of salt
enough water to bind the dough

Coconut filling :

250 grms of fresh coconut
4 tbsp of melted butter
1 cup of sugar
2 eggs
8 tbsp of milk
a few drops of yellow coloring

1) Mixed flour, sugar and salt together. Rub butter into with the flour mixture with your hands until it resembles bread crumbs.
2) Add in beaten egg and a bit of water and mix until it becomes a pliable dough. Let it rest for 30 minutes.
3) Line the tart moulds with the pastry.
4) Mix all the filling ingredients and fill it into the lined tart moulds.
5) Bake the tarts in a pre-heated 350 degree F oven for 35 minutes or until golden brown

I suka coconut tart, tapi sekarang dah kurangkan sikit sebab yang kat kedai tu selalu manis sangat, lepas tu kadang2 coconut dia bau hapaklah pulak.

Envy, thank you. Another coconut tarts fan :) :) I think you can get frozen fresh coconut from the Indian store or at the frozen aisle from the supermarket.

This recipe is wonderful and I got rave reviews when I brought them to my son's cultural family day for his pre-k class. I was going to make the famed coconut buns, but had shortness of time. I am wondering however, the ones that we buy in the bakery have a fluffy, cake like texture to them. Is this recipe missing flour as an ingrediant?
