Ingredients :
600 grm of mixed dried fruits (currants, sultanas, pineapple, apricots, etc)
1/2 cup of dark rum.
250 grms of butter
1 cups of dark brown sugar
4 eggs
2 cups of flour
1 tsp of baking powder
Zest of 1 lemon and 1 orange
1) Soak the dry fruits with rum for a week in the refrigerator
2) Prepare a baking tin and lined with double parchment paper
3) Cream butter and sugar until creamy
4) Add in eggs one at a time till well mix before adding another egg
5) Mix in the lemon and orange zest
6) Add in soak dry fruits and then fold in sifted flour and baking powder
7) Pour batter into prepared cake tin.
8) Bake in a pre-heated 325 degree F oven for 1 1/2 hour or until centre is firm to touch.
9) Let the cake cool in the tin before removing the cake.
Note : You can keep this cake up to 3 months in the fridge. Wrap it up properly in aluminium foil and drizzle it with rum at least once a week.

I agree with you that fruit cake in USA are too sweet to my liking. They are always overloaded with sweetern cherries. Small piece sudah cukup for whole day.

Gert, I love fruits cake. Every open house I go, I will look for authentic traditional Malaysian fruits cake. I bought a piece from a store here but it was too sweet and I really don't like the orange peel they use.

Thanks for sharing your recipe, Gert. I LOVE fruit cake but like everyone, have not acquired the taste for the US version. My mom used to make it with the Big Sister ingredients, and I was just thinking of ordering online from BS. Will try yours. :)
PS: I tried baking bread again yesterday. David called it banana brick!! We think my flour is stale. Sigh.

Gert, my mom makes fantastic fruit cakes too. Her recipe is often 'a bowl of this, a bowl of that' hehe...no definite measurements whatsoever, but it's always fantastic! She adds some brandy for that extra edge, and my crew members who tasted her fruit cake had nothing but praises for it.
Pinky, my mother is the same. All pakai agak agak only. No measurement :) :) and always turn out perfect. mmm maybe one day I will get to taste your mom's fruitcakes.

thanks for the true and tried recipe...wonderful,my first attempt was considered a success. most of my friends 'puji' that the cake is moist like a steamed cake,and some said it tastes better than the one sold at shops. i was amazed and most surprising,some even ordered.
